*All prices and weights are based on hanging weight, and include cutting, wrapping and freezing. Take-home weights are approximately 20-30% less than the hanging weight due to trimming and deboning.
Orders are taken in the spring along with a deposit to help defray production costs and guarantee your order. All pork comes to you frozen.
Notes: When purchasing pork sides you choose all your own cuts using a cutting sheet we provide (click here to view pork cutting sheet). We try to aim for about 100 lb per side hanging weight but there can be A LOT of variation, so it's good to specify on your cutting sheet your preference for a smaller or larger hog - we'll then do our best to match the carcasses to your request. A 100 lb hanging weight side usually comes to about 65 to 70 lbs of meat cut and wrapped, depending a bit on the cutting options chosen.
